Plant-Based Baking: Using Dairy Alternatives

MILK

Replace milk with any Plant-Based Beverage. If you add it to the recipe earlier than the directions specify, it will enhance the flavor.

The unsweetened Plant-Based Beverages will make for a slightly denser texture in muffins and cakes.

BUTTERMILK

Replace buttermilk with most Plant-Based Beverage. Simply mix one cup of the beverage with one tablespoon of vinegar or lemon juice. Avoid almond, hazelnut, and soy as they can curdle with combined with acid.

Hemp makes baked goods fluffier than other alternatives. Its a great choice for pancakes!

EVAPORATED MILK

Replace evaporated milk with any Plant-Based Beverage. Simmer two cups of the beverage over medium-heat, stirring constantly until reduced to one cup (approximately 15 minutes). Cool and use immediately or seal tightly and store in refrigerator for up to one week.

SWEETENED CONDENSED MILK

Replace sweetened condensed milk with any Plant-Based Beverage. First step will be to make the evaporated milk from above, keep it in the saucepan and do not cool. Add 3/4 cup of sugar and stir over medium-high heat until fully dissolved. Cool and use immediately or seal tightly and store in a refrigerator for up to one week.

Lactose Intolerant?

Lactose Intolerance occurs in those who are unable to digest the main sugar (lactose) found in milk and dairy products. As a result, severe stomach discomfort such as bloating, gas, and abdominal cramps can occur. These symptoms can arise 30 minutes to 2 hours after consuming dairy products and can be very unpleasant. Going dairy-free is one way to prevent symptoms, but can be a challenge to manage.
